A Gentler Bean

Adzuki (also known as azuki, aduki, or red bean) is a member the legume genus Vigna, which are referred to as “the grams.” Adzuki are reddish brown in color. This rich color is what provides many of its healthful antioxidant properties. They have a distinctive white ridge along one side. Their flavor is described as nutty and sweet. Their smaller size make them quick-cooking.
